Gorgonzola piccante DOP is the version of this product that is closest to the origin. It has a very typical and intense taste and it distinguishes for its blue veins. Today it represents only a small portion of the market share, as the changing consumer tastes have changed from the past and now consumers tend to prefer the sweet version of Gorgonzola. It is called “picante” because its flavour is more intense than the sweet version. Its consistency is compact and more solid than the sweet version and it makes it more ideal to be consumed alone with some honey or onion mustard.
