Description

Alte Hexe (“Old Witch”) is a Swiss semi-hard cheese made from raw cow’s milk. It is the “older sibling” of the well-known Rote Hexe (“Red Witch”), but aged longer and lacking the bright paprika-colored rind. Instead, it has a natural washed rind distinguished by a complex flavor with notes of mushrooms, nuts, clarified butter, and autumn forest aromas developed through extended aging (from 9 months). This gives the cheese a firm texture, rich aroma, and intense taste.
